Simple Idea #4: Simple Buttermilk Waffles
So I have a question.
Are you a pancake or a waffle person?
I am both! But if I had to choose between the two, I’ll go with waffles. I love the slight crunchiness of the waffles.
I wish I had a pretty picture to share in this post and when I do, I’ll definitely do an update but until then, these pictures will do. This is a family recipe that we’ve been trying ever since I joined my husband’s family. This is a fantastic buttermilk waffles recipe; the waffles are so tasty that I just can’t get enough of them.
These waffles are wonderful with fresh fruits, whipped cream, peanut butter, nutella, or just plain with a little bit of syrup which I love. I just love that unique flavor of freshly cooked waffles. Sometimes I put chocolate chips in them, like in the picture. The kids love it that way! Well, who am I kidding. I love it that way, too!
Basic Buttermilk Waffles
Ingredients:
2 eggs
2 cups buttermilk
1 teaspoon baking soda
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
6 tablespoons soft shortening
Directions:
Heat your waffle iron and you may want to grease it by spraying cooking spray or buttering it so the waffles don’t stick. You only need to spray for the first batch.
In a large mixing bowl, beat the eggs until lightly frothy.
In a separate bowl, sift together soda, flour baking powder, and salt.
Add half the buttermilk to the eggs, then half the dry ingredients, then ALL the shortening.
Then add the remaining buttermilk and dry ingredients and mix until batter looks somewhat lumpy.
Pour about 3/4 cup batter onto the waffle iron evenly. Follow the waffle iron directions and cook the waffles to your liking. I like mine a little crunchy so I leave it in the iron a little bit longer.
*You can add chocolate chips to the batter if you’d like. Top the waffles with your favorite waffle toppings. Enjoy!
